Medjool Jewels

Level of Difficulty: Easy

This is one of my favorite Christmas deserts and it is my Grandmother's recipe.  Medjool dates are the key ingredient in this recipe.  I have made it with different dates, but... they weren't worth the calories.

This may be pressed into a pan and topped with coconut or rolled into balls and coated with coconut. I prefer to roll them into bite sized balls.  There's no evidence left behind when they are bite sized.  :)

Makes ~48 where each one has approximately:
50 Calories, 14g Carbs, 2g Fat, 1g Protein

Medjool Jewels

2 T             Butter
1 cup         White Sugar
2                Eggs
1 cup         Medjool Dates (pitted and quartered)
1 cup         Rice Krispies
1/2 cup      Corn Flakes
1/2 cup      Corn or Rice Chex
1/2 cup   Long or Flaked Coconut (reserve 1/2 cup to roll)


    1. Mix the Rice Krispies, Corn Flakes and 1 cup of coconut in a large bowl.

    2. Cook Butter, Sugar, and Dates in a small saucepan, over low heat, stirring constantly, till the Dates have broken down into a paste, approximately 5 minutes.

    3. Break Eggs into a small bowl and beat with a fork.

    4. Pour Eggs into the date mixture slowly while stirring constantly.  The eggs must be added slowly, while constantly stirring over low heat or the egg will cook before it is incorporated into the mixture.

      5. Pour the date mixture over the combined Cereal and Coconut.

      6. Mix and allow the mixture to cool until it can be handled comfortably. Approximately 15 minutes

      7. Roll the mixture into bite sized balls.

      8. Roll the balls in coconut, refrigerate till firm.

      9. Enjoy!!  These should be stored covered in the refrigerator, if they last that long. :)
