Chicken Salad with Cranberries and Pepitas

Chicken Salad with Cranberries and Pepitas


Makes ~4 servings where each serving has approximately:
141 Calories, 7g Carbs, 4g Fat, 17g Protein


Chicken Salad with Cranberries and Pepitas

1 1/2 cupsRoasted Skinless Chicken
1 ozDried Cranberries
1 TRoasted Pepitas
1 TMiracle Whip
Salt and Pepper to taste

Directions
    1. Dice the chicken and place in a medium mixing bowl.
    2. Mix in the Cranberries, Pepitas, and Miracle Whip.
    3. Add Salt and Pepper to taste and serve.


The Pepitas will soften, therefore to keep them crunchy they should be added just before serving.
