Cherry Surprise

Merry Christmas and Happy New Year!!!This recipe is early, but I am completing my holiday baking and I would like to share it with you before the holidays.



This recipe completes my Christmas baking for this year!! The following are my Favorites for the Holiday Season:


Makes 42 where each one has approximately:
92 Calories, 9g Carbs, 7g Fat, 1g Protein


Cherry Surprise

1 1/2 cupsFine Coconut
1 1/2 cupsIcing Sugar (Gluten Free)
1/2 cupButter
1 tCream
1 tAlmond Flavoring
16 oz jarMaraschino Cherries (drained)
Gluten Free Corn Flake Crumbs (to coat balls)

Directions
    1. Drain the Cherries and set them in a bowl lined with paper towel to continue to drain. Set aside.


    2. Cream the Butter with an electric mixer in a large bowl.
    3. Add Coconut, Icing Sugar, Cream and Almond Flavoring

    4. Take approximately 1 teaspoon of the mixture and wrap it around the cherry.



    5. Then roll in Corn Flake Crumbs.

    6. Some of the cherries may be cut into small pieces to decorate the top of the balls.

    7. Refrigerate until firm.

These can be stored in the refrigerator or freezer. This is a great dessert to make in advance and freeze. Freezing does not effect the taste.
