Ginger Snap Cookies

Ginger Snap Cookies are one of my Mother's Holiday Classics. Inspired by her recipe I used to Cup4Cup Gluten Free Flour (feel free to use a different GF Flour, but be warned your mileage may vary) to create a Gluten Free Ginger Snap Cookie. This is a great recipe to make with kids, and they make the house smell delicious!

I brought these cookies into a class recently and they disappeared in seconds!

Makes approximately 48 cookies where each one has approximately:
69 Calories, 10g Carbs, 3g Fat, 0g Protein


Ginger Snap Cookies

1 cupGluten Free Flour
1 TGinger
1 tCinnamon
2 tBaking Soda
1/2 tSalt
3/4 cupMargarine
1 cupSugar
1Egg
1/4 cupMolasses

Directions
    1. Pre-heat the oven to 325F

    2. Measure the Flour, Ginger, Cinnamon, Baking Soda, and Salt into a medium bowl.

    3. Cream the Margarine and Sugar together using an electric mixer in a large bowl.
    4. Beat in the Egg and Molasses with the mixer.
    5. Add the dry ingredients to the Molasses mixture.
    Tip: The mixture will be quite stiff. If it is too dry, add molasses to thin the mixture.
    6. Form balls with spoonfuls of dough.
    Tip: The cookies in the photo were decorated by dipping the ball of dough into a mixture of white sugar and red and green decorating sugar. They can be dipped into any combination of sugar or decorated with icing after they have been baked and cooled.
    7. Place on cookie sheet approximately 2 inches apart, cookies will flatten as they bake.
    8. Bake in oven for 8-10 minutes until brown on edges. Cookies will appear soft but will harden as they cool.

The cookies may be decorated with sugar before baking or icing after they are baked and cooled. Your Imagination is the limit.

The batter for this recipe may be frozen and baked later. The cookies freeze beautifully as well. If you decorate with icing it is better to decorate them after they have been thawed to prevent the icing form running.
